Description

A delightful fusion of coffee cake and cookies with a tender texture and a sweet streusel topping.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar (for streusel)
  • 1/4 cup all-purpose flour (for streusel)
  • 1/4 cup cold butter (for streusel)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking powder, baking soda, and salt in a mixing bowl.
  3. Cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Mix the dry ingredients gradually until just combined.
  6. Prepare the streusel by mixing brown sugar, flour, and cold butter until crumbly.
  7. Spoon dollops of cookie dough onto the prepared baking sheet and sprinkle streusel on top.
  8. Bake for 12-15 minutes until edges are golden brown.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies can be enjoyed warm or stored in an airtight container at room temperature for up to five days. For longer storage, freeze them for up to three months.
