- 1 lb chicken breast, cut into cubes
- 1/2 cup coconut milk
- Juice of 2 limes
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 tablespoon honey
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions
- In a bowl, whisk together coconut milk, lime juice, soy sauce, garlic, honey, salt, and pepper until well combined.
- Add the chicken cubes to the bowl of marinade, making sure each piece is well-coated. Cover the bowl and let it sit in the refrigerator for at least 30 minutes.
- While the chicken is marinating, preheat your grill to medium-high heat.
- Once the chicken has marinated, thread the chicken cubes onto skewers and grill for about 10-15 minutes, turning occasionally, until the chicken is cooked through.
- Remove the skewers from the grill and serve them immediately with lime wedges on the side.
