Description

These Coconut Lime Chicken Skewers feature tender chicken marinated in a tropical mixture of coconut milk and lime, perfect for summer cookouts or casual dinners.


Ingredients

  • 1 lb chicken breast, cut into cubes
  • 1/2 cup coconut milk
  • Juice of 2 limes
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. In a bowl, whisk together coconut milk, lime juice, soy sauce, garlic, honey, salt, and pepper until well combined.
  2. Add the chicken cubes to the bowl of marinade, making sure each piece is well-coated. Cover the bowl and let it sit in the refrigerator for at least 30 minutes.
  3. While the chicken is marinating, preheat your grill to medium-high heat.
  4. Once the chicken has marinated, thread the chicken cubes onto skewers and grill for about 10-15 minutes, turning occasionally, until the chicken is cooked through.
  5. Remove the skewers from the grill and serve them immediately with lime wedges on the side.
