- 1 cup rice
- 2 cups coconut milk
- 1 lb chicken breast, diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 cup chicken broth
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- In a large pot, heat a little oil over medium heat. Add the chopped onion and garlic; sauté until soft and fragrant.
- Add the diced chicken and grated ginger to the pot. Cook until the chicken is browned, about 5-7 minutes.
- Stir in the rice, coconut milk, and chicken broth. Bring to a boil, then reduce to a simmer. Cover and cook for about 20 minutes.
- Once cooked, season with salt and pepper to taste. Serve hot, garnished with chopped cilantro.
Notes
For a thinner broth, add more chicken broth or coconut milk. You can add vegetables like spinach or bell peppers during cooking for extra nutrition.
