A delightful one-pot dish combining tender chicken, creamy coconut milk, and fluffy rice, perfect for any occasion.


Ingredients

  • 1 cup rice
  • 2 cups coconut milk
  • 1 lb chicken breast, diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 cup chicken broth
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. In a large pot, heat a little oil over medium heat. Add the chopped onion and garlic; sauté until soft and fragrant.
  2. Add the diced chicken and grated ginger to the pot. Cook until the chicken is browned, about 5-7 minutes.
  3. Stir in the rice, coconut milk, and chicken broth. Bring to a boil, then reduce to a simmer. Cover and cook for about 20 minutes.
  4. Once cooked, season with salt and pepper to taste. Serve hot, garnished with chopped cilantro.

Notes

For a thinner broth, add more chicken broth or coconut milk. You can add vegetables like spinach or bell peppers during cooking for extra nutrition.
