Ingredients
Scale
- 1 tube (12.4 oz) refrigerated cinnamon rolls (8-count or 5-count depending on brand; you need 12 rolls total or cut larger ones)
- 2 large Granny Smith apples, peeled and finely diced
- 2 tablespoons unsalted butter
- 1/4 cup brown sugar, packed
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
- 2 tablespoons cold water
- Reserved icing from the cinnamon roll package
Instructions
- Preheat your oven to 375°F (190°C). Generously grease a 12-cup standard muffin tin with non-stick cooking spray or butter. Peel your apples and dice them into very small, uniform pieces to ensure they cook through quickly during the short baking time.
- In a medium saucepan over medium heat, melt the butter. Add the diced apples, brown sugar, cinnamon, and vanilla extract. Cook for about 5 minutes until the apples begin to soften. In a small bowl, whisk the cornstarch and water together to create a slurry, then pour it into the apple mixture. Stir constantly for 1-2 minutes until the liquid thickens into a glossy sauce. Remove from heat and let it cool slightly.
- Open the cinnamon roll package and set the icing aside. Take each cinnamon roll and flatten it out using your fingers or a rolling pin until it is about 4 inches in diameter. Press each flattened roll into the bottom and up the sides of the prepared muffin tin cups, creating a small well for the filling.
- Spoon approximately 1-2 tablespoons of the apple filling into the center of each cinnamon roll cup. Place the muffin tin in the oven and bake for 15 to 20 minutes, or until the edges of the cinnamon rolls are golden brown and the dough is cooked through. If the centers look slightly soft, that is okay; they will firm up as they cool.
- Allow the cups to cool in the pan for about 5 minutes before carefully lifting them out with a butter knife. Warm the reserved icing in the microwave for 10 seconds to make it pourable. Drizzle the icing over the warm apple pie cups and serve immediately for the best experience.
- Cook Time: 35 minutes
