Ingredients
Scale
- 1 cup low-fat or whole milk cottage cheese
- 1 medium crisp apple (such as Honeycrisp or Granny Smith), diced
- 1 teaspoon ground cinnamon
- 1 teaspoon maple syrup or honey (optional)
- 1/2 teaspoon coconut oil or butter
- 2 tablespoons chopped pecans or walnuts
- A pinch of sea salt
Instructions
- Start by dicing your apple into small, bite-sized pieces. You do not need to peel the apple unless you prefer the texture without the skin. Measure out your cottage cheese and place it in a serving bowl. If you prefer a smoother consistency, you can whip the cottage cheese in a blender for 30 seconds before putting it in the bowl.
- Place a small non-stick skillet over medium heat and add the coconut oil or butter. Once melted, toss in the diced apples and sprinkle them with the cinnamon and a tiny pinch of sea salt. Sauté the apples for 3 to 5 minutes until they become tender and fragrant. If the pan looks too dry, add a splash of water to help create a cinnamon glaze.
- Scoop the warm cinnamon apples directly over the cold cottage cheese. Drizzle with maple syrup or honey if you desire extra sweetness. Top the bowl with chopped pecans or walnuts for a necessary crunch. Serve immediately while the apples are still steaming for the best contrast in temperatures.
- Cook Time: 10 minutes
