Description

A creamy and subtly sweet rice dish that brings a touch of tropical flair to your festive table.


Ingredients

  • 1 cup rice
  • 1 can (13.5 oz) coconut milk
  • 1 cup water
  • 1/4 cup sugar
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • Optional: shredded coconut for garnish

Instructions

  1. Start by rinsing the rice under cold water until the water runs clear.
  2. In a saucepan, combine the rinsed rice, coconut milk, water, sugar, and salt. Stir gently.
  3. Bring the mixture to a boil over medium heat.
  4. Once it reaches a boil, reduce the heat to low, cover the saucepan, and let it simmer for about 18-20 minutes.
  5. Remove the saucepan from the heat and let it sit covered for an additional 5 minutes.
  6. Fluff the rice with a fork, stir in the vanilla extract, and serve warm. Garnish with shredded coconut if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of water or coconut milk.
