Ingredients

- 1 cup rice
- 1 can (13.5 oz) coconut milk
- 1 cup water
- 1/4 cup sugar
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- Optional: shredded coconut for garnish
Instructions
- Start by rinsing the rice under cold water until the water runs clear.
- In a saucepan, combine the rinsed rice, coconut milk, water, sugar, and salt. Stir gently.
- Bring the mixture to a boil over medium heat.
- Once it reaches a boil, reduce the heat to low, cover the saucepan, and let it simmer for about 18-20 minutes.
- Remove the saucepan from the heat and let it sit covered for an additional 5 minutes.
- Fluff the rice with a fork, stir in the vanilla extract, and serve warm. Garnish with shredded coconut if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of water or coconut milk.
