Description

Delicious tacos featuring shrimp marinated in honey and chipotle sauce, served with fresh mango cucumber salsa.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons honey
  • 2 tablespoons chipotle in adobo sauce
  • 1 tablespoon olive oil
  • 1 cup mango, diced
  • 1 cup cucumber, diced
  • 1 lime, juiced
  • Corn or flour tortillas
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Combine honey, chipotle sauce, salt, and pepper. Add the shrimp and let marinate for about 15 minutes.
  2. Heat olive oil in a skillet over medium heat. Once hot, add the marinated shrimp and cook for 2-3 minutes on each side until sticky and caramelized.
  3. Mix together the diced mango, cucumber, lime juice, and a pinch of salt in another bowl for the salsa.
  4. Warm tortillas in a skillet or microwave, then assemble tacos with shrimp, mango cucumber salsa, and garnish with cilantro.

Notes

For a milder flavor, use smoked paprika instead of chipotle in adobo sauce. Serve tacos with a side of Mexican rice or tortilla chips.
