Delicious tacos featuring shrimp marinated in honey and chipotle sauce, served with fresh mango cucumber salsa.

- 1 lb shrimp, peeled and deveined
- 2 tablespoons honey
- 2 tablespoons chipotle in adobo sauce
- 1 tablespoon olive oil
- 1 cup mango, diced
- 1 cup cucumber, diced
- 1 lime, juiced
- Corn or flour tortillas
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- Combine honey, chipotle sauce, salt, and pepper. Add the shrimp and let marinate for about 15 minutes.
- Heat olive oil in a skillet over medium heat. Once hot, add the marinated shrimp and cook for 2-3 minutes on each side until sticky and caramelized.
- Mix together the diced mango, cucumber, lime juice, and a pinch of salt in another bowl for the salsa.
- Warm tortillas in a skillet or microwave, then assemble tacos with shrimp, mango cucumber salsa, and garnish with cilantro.
Notes
For a milder flavor, use smoked paprika instead of chipotle in adobo sauce. Serve tacos with a side of Mexican rice or tortilla chips.
