Chickpea Cauliflower Wraps

Description

Healthy and satisfying wraps filled with roasted chickpeas and cauliflower, perfect for lunch or a light dinner.


Ingredients

Scale
  • 1 can chickpeas, drained and rinsed
  • 1 head cauliflower, cut into florets
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Whole wheat wraps or tortillas
  • Toppings of choice (lettuce, tomatoes, avocado, sauces)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the chickpeas and cauliflower florets with olive oil, garlic powder, cumin, and season with salt and pepper. Make sure everything is evenly coated.
  3. Spread the chickpea and cauliflower mixture on a baking sheet. Roast in the oven for about 25-30 minutes, or until they are golden and tender, stirring halfway through for even roasting.
  4. Fill each wrap with the roasted mixture and top it off with your choice of toppings. Roll up the wraps tightly and enjoy your meal!

Notes

Serve warm with a side of hummus or fresh salad. Great for meal prep and reheating.
