Healthy and satisfying wraps filled with roasted chickpeas and cauliflower, perfect for lunch or a light dinner.
Ingredients

- 1 can chickpeas, drained and rinsed
- 1 head cauliflower, cut into florets
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Whole wheat wraps or tortillas
- Toppings of choice (lettuce, tomatoes, avocado, sauces)
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the chickpeas and cauliflower florets with olive oil, garlic powder, cumin, and season with salt and pepper. Make sure everything is evenly coated.
- Spread the chickpea and cauliflower mixture on a baking sheet. Roast in the oven for about 25-30 minutes, or until they are golden and tender, stirring halfway through for even roasting.
- Fill each wrap with the roasted mixture and top it off with your choice of toppings. Roll up the wraps tightly and enjoy your meal!
Notes
Serve warm with a side of hummus or fresh salad. Great for meal prep and reheating.
