- 1 lb ground chicken
- 1 small onion, grated
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Skewers (if using wooden, soak in water for 30 minutes)
- 1 cup plain yogurt
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- Salt to taste
Instructions
- Combine ground chicken, grated onion, minced garlic, parsley, cilantro, cumin, coriander, paprika, salt, and pepper in a large bowl. Mix until all ingredients are well incorporated.
- Form the mixture into elongated patties or meatballs and thread them onto skewers. If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
- Preheat a grill or griddle over medium-high heat. Cook the kofta skewers for about 10-12 minutes, turning occasionally, until they are cooked through and have a beautiful char.
- Prepare the garlic yogurt sauce by combining yogurt, minced garlic, lemon juice, and salt in a bowl. Stir until the mixture is smooth and creamy.
Notes
For added moisture, consider adding a tablespoon of olive oil to the chicken mixture. This dish pairs beautifully with rice or a light salad.
