Ingredients

  • 1 lb ground chicken
  • 1 small onion, grated
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Skewers (if using wooden, soak in water for 30 minutes)
  • 1 cup plain yogurt
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • Salt to taste

Instructions

  1. Combine ground chicken, grated onion, minced garlic, parsley, cilantro, cumin, coriander, paprika, salt, and pepper in a large bowl. Mix until all ingredients are well incorporated.
  2. Form the mixture into elongated patties or meatballs and thread them onto skewers. If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
  3. Preheat a grill or griddle over medium-high heat. Cook the kofta skewers for about 10-12 minutes, turning occasionally, until they are cooked through and have a beautiful char.
  4. Prepare the garlic yogurt sauce by combining yogurt, minced garlic, lemon juice, and salt in a bowl. Stir until the mixture is smooth and creamy.

Notes

For added moisture, consider adding a tablespoon of olive oil to the chicken mixture. This dish pairs beautifully with rice or a light salad.
