- 1 cup pumpkin puree

- 1/2 tsp ginger
- 1/2 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add in pumpkin puree, egg, and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, and salt.
- Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes, or until the edges are set and the tops are slightly firm.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For a richer flavor, use homemade pumpkin puree. Store cookies in an airtight container for up to 5 days or freeze for longer storage.
