- 1 cup unsalted butter, melted
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder

- Zest of 1 lemon
- 1 cup fresh blueberries
- Juice of 1 lemon
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish to ensure easy removal of the blondies once baked.
- In a large bowl, combine the melted butter, brown sugar, and granulated sugar, mixing until the mixture is smooth and creamy.
- Add the eggs and vanilla extract to the butter-sugar mixture. Stir until well combined.
- In another bowl, whisk together the flour, baking powder, salt, and lemon zest.
- Gradually add the dry ingredient mixture to the wet ingredients, stirring gently until just combined.
- Gently fold in the blueberries and lemon juice.
- Pour the batter into the prepared baking dish and spread it out evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for a few minutes before transferring to a wire rack. After completely cool, cut into squares for serving.

Serve with whipped cream or vanilla ice cream for an extra treat. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
