- 4 large potatoes
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup sour cream
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Wash the potatoes thoroughly and pierce them several times with a fork to allow steam to escape while baking. Place them directly on the oven rack and bake for 45-60 minutes until they are tender.
- Heat a skillet over medium heat. Add the ground beef and brown it, breaking it into smaller pieces with a spatula. Once browned, drain excess fat.
- Sprinkle the packet of taco seasoning over the browned beef. Add the appropriate amount of water as per the packet instructions, stir together, and let it simmer for a few minutes.
- Slice the baked potatoes in half lengthwise. Carefully scoop out some of the inner potato flesh, leaving a small border around the skin. In a mixing bowl, combine the scooped potato flesh, seasoned ground beef, sour cream, and half of the shredded cheese.
- Spoon the mixture back into the potato skins. Top each filled potato half with the remaining cheese and return them to the oven. Bake for an additional 15 minutes until the cheese is melted and bubbly.
- Remove the cheesy taco potatoes from the oven and sprinkle with chopped green onions before serving warm.
Notes
Feel free to add toppings like jalapeños, salsa, or additional sour cream for customization.
