Ingredients

- 1 lb ground beef
- 1 cup white rice
- 2 cups beef broth
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 can cream of mushroom soup
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 cup frozen mixed vegetables (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Brown the ground beef over medium heat in a skillet. Drain excess fat.
- Add the chopped onion and minced garlic. Sauté until translucent.
- Stir in the rice, beef broth, cream of mushroom soup, and optional vegetables. Season with salt and pepper.
- Transfer the mixture to a greased casserole dish, spreading it evenly.
- Cover the dish with aluminum foil, and bake for 30 minutes.
- Remove the casserole and take off the foil. Sprinkle cheese on top.
- Return the casserole to the oven and bake uncovered for another 10-15 minutes.
- Let the casserole cool slightly before serving.
Notes
Serve warm with a salad or bread. Store leftovers in an airtight container for up to 3 days.
