Description

A comforting layer of ground beef, rice, and cheese in a warm, bubbling casserole perfect for weeknights or gatherings.


Ingredients

  • 1 lb ground beef
  • 1 cup white rice
  • 2 cups beef broth
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 can cream of mushroom soup
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 cup frozen mixed vegetables (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the ground beef over medium heat in a skillet. Drain excess fat.
  3. Add the chopped onion and minced garlic. Sauté until translucent.
  4. Stir in the rice, beef broth, cream of mushroom soup, and optional vegetables. Season with salt and pepper.
  5. Transfer the mixture to a greased casserole dish, spreading it evenly.
  6. Cover the dish with aluminum foil, and bake for 30 minutes.
  7. Remove the casserole and take off the foil. Sprinkle cheese on top.
  8. Return the casserole to the oven and bake uncovered for another 10-15 minutes.
  9. Let the casserole cool slightly before serving.

Notes

Serve warm with a salad or bread. Store leftovers in an airtight container for up to 3 days.
