Ingredients
Scale
- 1 lb Italian sausages (sweet or spicy), sliced into rounds
- 3 large bell peppers (green, red, or yellow), sliced into strips
- 1 large yellow onion, sliced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes (undrained)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 2 cups uncooked long-grain white rice
- 4 cups water or chicken broth (for cooking the rice)
Instructions
- Start by slicing your sausages into 1-inch thick rounds. If you want extra flavor, you can quickly brown them in a skillet for 5 minutes, but this isn’t strictly necessary for a “cheap and easy” version. Core the bell peppers and slice them into long, thin strips. Peel the onion and slice it into half-moons. Mince your garlic cloves finely. Having all your vegetables prepped and ready to go makes the assembly process take less than two minutes.
- Place the sliced sausages, peppers, onions, and minced garlic into the bottom of your slow cooker. Pour the entire can of diced tomatoes over the top, including the liquid. Sprinkle in the dried oregano, basil, red pepper flakes, salt, and pepper. Stir the ingredients gently to ensure the spices are distributed. Cover the crockpot and cook on Low for 6 hours or on High for 3 to 4 hours. The vegetables should be tender and the sausage should be fully cooked through and juicy.
- About 20 minutes before you are ready to serve, cook your rice on the stovetop or in a rice cooker using the water or chicken broth. Once the rice is fluffy and the crockpot timer is up, give the sausage and peppers a final stir. To plate, scoop a generous portion of rice into a bowl and ladle the sausage, peppers, and the delicious tomato broth over the top. Serve immediately while steaming hot.
- Cook Time: 6 hours 15 minutes
