Description

Buffalo Chicken Zucchini Boats are a fun and flavorful dish that combines buffalo chicken with healthy zucchini, perfect for game day or a quick weeknight dinner.


Ingredients

  • 4 medium zucchinis
  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 1/2 cup cream cheese
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Cut the zucchinis in half lengthwise and use a spoon to scoop out the center, creating boats that will hold the filling.
  2. Mix the shredded chicken with buffalo sauce and cream cheese until well combined.
  3. Spoon the mixture into the hollowed-out zucchini boats, packing it in generously.
  4. Top each filled zucchini with a sprinkle of shredded cheddar cheese.
  5. Place the boats on a baking sheet and bake for 25-30 minutes or until the zucchini is tender and the cheese is bubbly and golden.
  6. Remove from the oven and garnish with chopped green onions before serving.
