  • 2 cups frozen blueberries
  • 1/2 cup fresh lemon juice (about 23 large lemons)
  • 1 cup cold water or sparkling water
  • 1 cup ice cubes
  • 1/2 teaspoon lemon zest (optional, for extra zing)
  • Liquid stevia or monk fruit drops to taste (optional)
  • Fresh mint leaves for garnish

Instructions

  1. Squeeze the fresh lemons until you have half a cup of juice. Be sure to remove any seeds that may have fallen in. Using fresh juice rather than bottled concentrate makes a massive difference in the brightness of the flavor.
  2. Place the frozen blueberries, fresh lemon juice, water, ice cubes, and lemon zest into your blender jar. If you prefer a slightly sweeter drink, add a few drops of your favorite natural sugar substitute at this stage.
  3. Secure the lid on the blender. Start on a low speed to break up the ice and frozen berries, then gradually increase to high. Blend for about 30 to 60 seconds until the mixture is smooth and reaches a thick, slushy consistency.
  4. Stop the blender and check the texture. If it is too thick, add a splash more water. If it is too thin, add a few more ice cubes and pulse again until you reach your desired frostiness.
