Instructions
- Combine chia seeds, almond milk, maple syrup, vanilla extract, lemon zest, and lemon juice in a bowl. Stir well to ensure even dispersion of chia seeds.
- Add the blueberries to the mixture and gently fold them in, being careful not to mash them.
- Cover the bowl and refrigerate overnight to allow chia seeds to absorb the liquid and swell.
- Stir your chia pudding in the morning and serve chilled, garnished with extra blueberries or lemon zest.
