Description

A delightful and nutritious overnight chia pudding combining blueberries and the refreshing zing of lemon.

Ingredients

Scale
  • 1/4 cup chia seeds
  • 1 cup almond milk (or milk of choice)
  • 1 tablespoon maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • 1/2 cup blueberries
  • Zest of 1 lemon
  • Juice of 1 lemon

Instructions

  1. Combine chia seeds, almond milk, maple syrup, vanilla extract, lemon zest, and lemon juice in a bowl. Stir well to ensure even dispersion of chia seeds.
  2. Add the blueberries to the mixture and gently fold them in, being careful not to mash them.
  3. Cover the bowl and refrigerate overnight to allow chia seeds to absorb the liquid and swell.
  4. Stir your chia pudding in the morning and serve chilled, garnished with extra blueberries or lemon zest.

Notes

Enhance flavor with a pinch of sea salt or cinnamon; adjust maple syrup for sweetness as desired.
