Ingredients

Instructions

  1. Combine the fresh blueberries, granulated sugar, and lemon juice in a saucepan over medium heat. Cook until the blueberries burst and the mixture becomes syrupy, approximately 5-7 minutes.
  2. Strain the mixture through a fine-mesh sieve to remove the solids, ensuring a smooth curd.
  3. Whisk the egg yolks in a separate bowl until pale, then gradually whisk in the blueberry syrup.
  4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until thickened, about 5 minutes.
  5. Remove from heat and stir in butter and salt until smooth. Let cool and transfer to a jar.
