Description

Deliciously sweet blueberry crumble bars with a buttery oat crumble topping, perfect for any occasion.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup rolled oats
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups fresh or frozen blueberries
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Combine the all-purpose flour, rolled oats, brown sugar, granulated sugar, cinnamon, and salt in a large bowl.
  3. Cut in the softened butter until the mixture resembles coarse crumbs, reserving 1 cup for topping. Press the remaining mixture into the bottom of the prepared pan.
  4. Mix the blueberries with lemon juice in another bowl and spread over the crust.
  5. Top with the reserved crumb mixture and bake for about 30-35 minutes or until golden brown.
  6. Cool completely in the pan before cutting into squares.

Notes

These bars can be stored at room temperature for up to 3 days or refrigerated for up to a week. They freeze well for up to 3 months.
