Ingredients

  • 1 lb chicken breast, diced
  • 2 cups cooked rice
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 eggs, beaten
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your Blackstone griddle over medium-high heat.
  2. Add sesame oil to the griddle and heat until shimmering. Then, add the diced chicken breast to the griddle, season with salt and pepper, and cook until golden brown and cooked through, about 5-7 minutes.
  3. Push the chicken to one side of the griddle and add the mixed vegetables to the other side. Cook until tender, which should take about 3-4 minutes.
  4. Push the veggies to the side and pour the beaten eggs on the griddle. Scramble the eggs until fully cooked, then mix everything together.
  5. Add the cooked rice and soy sauce to the mixture, stirring everything together until well-combined and heated through.
  6. Stir in chopped green onions and serve hot.

Notes

For best flavor, use day-old rice to prevent mushiness. You can also mix in proteins like shrimp or tofu and experiment with vegetables.
