- 2 large potatoes, diced
- 1 bell pepper, diced
- 1 onion, diced
- 4–6 strips of bacon, chopped
- 4 eggs
- Salt and pepper to taste
- Olive oil or cooking spray
Instructions
- Preheat the Blackstone griddle over medium heat and add a bit of olive oil or cooking spray.
- Add the chopped bacon to the griddle and cook until crispy.
- Once the bacon is cooked, add the diced potatoes, bell pepper, and onion to the griddle. Season with salt and pepper.
- Stir everything together and let the vegetables cook until the potatoes are tender and slightly browned, about 10-15 minutes.
- Create small wells in the hash and carefully crack the eggs into the wells.
- Cover the griddle and cook until the eggs are set to your liking.
