Delicious Mexican Birria Tacos made with rich, slow-cooked beef and vibrant chili flavors.

- 2 lbs beef chuck, cut into chunks
- 3 dried guajillo chilies
- 2 dried ancho chilies
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp ground black pepper
- 1 tsp salt
- 4 cups beef broth
- Corn tortillas
- Chopped cilantro, for serving
- Chopped onions, for serving
- Lime wedges, for serving
Instructions
- Toast the dried guajillo and ancho chilies in a dry skillet over medium heat until fragrant. After toasting, remove the stems and seeds.
- Blend the toasted chilies with the chopped onion, minced garlic, cumin, oregano, black pepper, and salt. Add a bit of beef broth to achieve a smooth paste.
- Place the beef chunks in a slow cooker and pour the chili paste over them. Add the remaining beef broth to the cooker.
- Cook on low for 6-8 hours or until the beef is tender and easily shreds apart.
- Once cooked, shred the beef with two forks and mix it well with the broth to soak up all the flavors.
- Serve the shredded beef in warm corn tortillas. Top with chopped cilantro, onions, and a squeeze of lime juice to elevate the flavors.
Notes
For a spicier kick, add more chilies or fresh jalapeños during blending. You can also substitute beef with jackfruit or mushrooms for a vegetarian option.
