- 1 lb ground beef
- 1 cup uncooked rice
- 2 cups beef broth
- 1 cup shredded cheese (cheddar or your choice)
- 1 medium onion, chopped
- 1 can diced tomatoes (optional)
- Salt and pepper to taste
- Olive oil (for cooking)
Instructions
- Preheat the oven to 350°F (175°C).
- Heat a splash of olive oil in a large skillet over medium heat and add the chopped onion, sautéing until translucent.
- Add the ground beef to the skillet and cook until browned, draining excess fat if necessary.
- Stir in the uncooked rice, beef broth, and optional diced tomatoes; season with salt and pepper. Bring to a boil, then cover and simmer for about 15 minutes.
- Transfer the mixture to a casserole dish and sprinkle shredded cheese on top.
- Bake in the preheated oven for 15-20 minutes until cheese is melted and bubbly.
- Serve hot, enjoying the comforting flavors.
Notes
For extra flavor, add a dollop of sour cream or salsa on top when serving. Store leftovers in an airtight container for up to 3 days.
