Description

Ingredients

  • 1 cup uncooked rice
  • 2 cups beef broth
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 medium onion, chopped
  • 1 can diced tomatoes (optional)
  • Salt and pepper to taste
  • Olive oil (for cooking)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat a splash of olive oil in a large skillet over medium heat and add the chopped onion, sautéing until translucent.
  3. Add the ground beef to the skillet and cook until browned, draining excess fat if necessary.
  4. Stir in the uncooked rice, beef broth, and optional diced tomatoes; season with salt and pepper. Bring to a boil, then cover and simmer for about 15 minutes.
  5. Transfer the mixture to a casserole dish and sprinkle shredded cheese on top.
  6. Bake in the preheated oven for 15-20 minutes until cheese is melted and bubbly.
  7. Serve hot, enjoying the comforting flavors.

Notes
