  • Yield: 4 servings 1x
  • Diet: None

Description

A hearty and comforting soup filled with tender beef, colorful vegetables, and chewy noodles in a savory broth, perfect for chilly evenings.

Ingredients

Scale
  • 1 lb beef (sliced)
  • 2 cups mixed vegetables (carrots, bell peppers, broccoli)
  • 4 cups beef broth
  • 200g noodles
  • 2 cloves garlic (minced)
  • 1 onion (chopped)
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • 2 green onions (sliced, for garnish)

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and the onion becomes translucent.
  2. Next, add the sliced beef to the pot. Stir and cook until the beef is nicely browned on all sides, enhancing its flavor and tenderness.
  3. Pour in the beef broth and bring it to a boil, building depth of flavor.
  4. Now, add the mixed vegetables and noodles to the pot. Cook until the noodles are tender, about 5-7 minutes.
  5. Stir in the soy sauce and season with salt and pepper to taste. Adjust seasoning if necessary.
  6. Serve hot in bowls, garnished with sliced green onions.

Notes

For longer storage, freeze soup for 2-3 months. If reheating, add extra broth or water as needed.
