A delightful homemade ice cream combining the flavors of ripe bananas and vanilla with a crunchy texture from cookie crumbs.


Ingredients

  • 2 ripe bananas
  • 1 cup heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup vanilla wafer crumbs

Instructions

  1. Start by mashing the bananas in a bowl until smooth.
  2. In a separate bowl, whisk together the heavy cream, whole milk, sugar, vanilla extract, and salt until the sugar has dissolved.
  3. Add the mashed bananas to the mixture and stir until well combined.
  4. Refrigerate the mixture for at least 2 hours to chill.
  5. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  6. In the last few minutes of churning, gently fold in the vanilla wafer crumbs.
  7. Transfer the ice cream to a lidded container and freeze for at least 4 hours or until firm.
  8. Once set, scoop the ice cream into bowls or cones and enjoy!
