A delightful homemade ice cream combining the flavors of ripe bananas and vanilla with a crunchy texture from cookie crumbs.

- 2 ripe bananas
- 1 cup heavy cream
- 1 cup whole milk
- 3/4 cup sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup vanilla wafer crumbs
Instructions
- Start by mashing the bananas in a bowl until smooth.
- In a separate bowl, whisk together the heavy cream, whole milk, sugar, vanilla extract, and salt until the sugar has dissolved.
- Add the mashed bananas to the mixture and stir until well combined.
- Refrigerate the mixture for at least 2 hours to chill.
- Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- In the last few minutes of churning, gently fold in the vanilla wafer crumbs.
- Transfer the ice cream to a lidded container and freeze for at least 4 hours or until firm.
- Once set, scoop the ice cream into bowls or cones and enjoy!
Notes
Use very ripe bananas for better flavor, and consider adding mix-ins like chocolate chips or nuts for variety.
