Ingredients

  • 1 cup mashed ripe bananas
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup instant vanilla pudding mix
  • 1 cup crushed vanilla wafers

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the mashed bananas, granulated sugar, brown sugar, and softened butter until smooth.
  3. Beat in the egg and vanilla extract. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix into the banana mixture.
  4. Stir in the instant vanilla pudding mix and crushed vanilla wafers.
  5. Drop spoonfuls of dough onto a cookie sheet lined with parchment paper, spacing them about 2 inches apart.
  6. Bake for 12-15 minutes or until the edges are light golden brown.
  7. Cool on a wire rack before serving.

Notes

For best results, use very ripe bananas. Consider adding nuts or chocolate chips for extra flavor.
