- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup instant vanilla pudding mix
- 1 cup crushed vanilla wafers
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the mashed bananas, granulated sugar, brown sugar, and softened butter until smooth.
- Beat in the egg and vanilla extract. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix into the banana mixture.
- Stir in the instant vanilla pudding mix and crushed vanilla wafers.
- Drop spoonfuls of dough onto a cookie sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until the edges are light golden brown.
- Cool on a wire rack before serving.
Notes
For best results, use very ripe bananas. Consider adding nuts or chocolate chips for extra flavor.
