- 1/3 cup melted butter
- 1 teaspoon baking soda

- 3/4 cup sugar
- 1 large egg, beaten

Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted butter into the mashed bananas before mixing in the baking soda and a pinch of salt.
- Next, add the sugar, beaten egg, and vanilla extract to the bowl. Mix until well combined. Finally, fold in the flour until just incorporated—be careful not to overmix!
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack.
