Ingredients

  • 1 cup rice
  • 2 cups milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/2 cup raisins (optional)
  • Cinnamon (for sprinkling, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine rice, milk, sugar, vanilla extract, and salt in a medium saucepan. Cook over medium heat until the mixture begins to boil.
  3. Remove from heat and let it sit for about 10 minutes to cool slightly.
  4. Beat the eggs in another bowl, then slowly add a few tablespoons of the rice mixture to temper the eggs. Mix well to combine, then pour the tempered eggs back into the rice mixture.
  5. Add raisins if using and stir the mixture to evenly distribute them.
  6. Pour the mixture into a greased baking dish and bake in the preheated oven for 30-35 minutes until set.
  7. Sprinkle with cinnamon before serving, if desired.

Notes

Serve warm or at room temperature. For an elegant touch, drizzle with honey or add a dollop of whipped cream.
