- 1 cup rice
- 2 cups milk
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 eggs
- 1/2 cup raisins (optional)
- Cinnamon (for sprinkling, optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine rice, milk, sugar, vanilla extract, and salt in a medium saucepan. Cook over medium heat until the mixture begins to boil.
- Remove from heat and let it sit for about 10 minutes to cool slightly.
- Beat the eggs in another bowl, then slowly add a few tablespoons of the rice mixture to temper the eggs. Mix well to combine, then pour the tempered eggs back into the rice mixture.
- Add raisins if using and stir the mixture to evenly distribute them.
- Pour the mixture into a greased baking dish and bake in the preheated oven for 30-35 minutes until set.
- Sprinkle with cinnamon before serving, if desired.
Notes
Serve warm or at room temperature. For an elegant touch, drizzle with honey or add a dollop of whipped cream.
