Description

A delightful dessert featuring ripe pears and creamy coconut milk, perfect for any occasion.


Ingredients

  • 4 ripe pears
  • 1 cup coconut milk
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 cup grated coconut
  • 1 tsp vanilla extract
  • 2 tbsp butter

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare the pears by slicing them in half and removing the core.
  2. Mix together the coconut milk, brown sugar, cinnamon, and vanilla extract in a medium bowl.
  3. Place the pear halves cut side up in a baking dish and pour the coconut mixture over them.
  4. Sprinkle the grated coconut on top and dot with small pieces of butter.
  5. Bake for 25 to 30 minutes until the pears are tender and the topping is golden brown.

Notes

Serve warm on its own or with vanilla ice cream. Can store leftovers in the fridge for up to 3 days.
