Description

Chilaquiles is a classic Mexican breakfast dish filled with vibrant flavors and textures from crispy tortilla chips and spicy salsa.


Ingredients

  • Corn tortillas
  • Vegetable oil
  • Salsa (red or green)
  • Eggs
  • Avocado
  • Sour cream
  • Cheese (like queso fresco or cotija)
  • Cilantro
  • Onion (optional)
  • Salt to taste

Instructions

  1. Cut the corn tortillas into triangles and fry them in hot vegetable oil until crispy and golden.
  2. Remove the fried tortillas from the oil and place them on paper towels to drain excess oil.
  3. Heat your choice of salsa (red or green) in the same pan until it simmers.
  4. Add the crispy tortillas to the salsa and stir gently to coat.
  5. Cook the eggs sunny-side up or scrambled in a separate pan.
  6. To serve, place the chilaquiles on a plate, top with eggs, sliced avocado, sour cream, cheese, onions (if using), and cilantro. Season with salt to taste.
