Delightful cookies that combine the essence of traditional apple pie with a crunchy cinnamon sugar topping.


Ingredients

  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup unsalted butter, softened
  • 1/3 cup brown sugar, packed
  • 1/3 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup diced apples (preferably Granny Smith)
  • 1/4 cup granulated sugar (for topping)
  • 1 teaspoon cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the flour, baking powder, baking soda, salt, and cinnamon in a mixing bowl.
  3. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
  4. Add the dry ingredients mixture gradually, mixing until just combined, then gently fold in the diced apples.
  5. Drop rounded scoops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Mix the additional granulated sugar and cinnamon together, then sprinkle generously over each cookie.
  7. Bake in the preheated oven for 12-15 minutes, until lightly golden around the edges.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to one week. Can freeze for up to three months.
