- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup unsalted butter, softened
- 1/3 cup brown sugar, packed
- 1/3 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup diced apples (preferably Granny Smith)
- 1/4 cup granulated sugar (for topping)
- 1 teaspoon cinnamon (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Combine the flour, baking powder, baking soda, salt, and cinnamon in a mixing bowl.
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
- Add the dry ingredients mixture gradually, mixing until just combined, then gently fold in the diced apples.
- Drop rounded scoops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Mix the additional granulated sugar and cinnamon together, then sprinkle generously over each cookie.
- Bake in the preheated oven for 12-15 minutes, until lightly golden around the edges.
- Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to one week. Can freeze for up to three months.
