Apple Crumble With Vanilla Protein High Protein

  • 4 large Granny Smith apples, peeled and sliced
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1 tablespoon maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • 2 scoops (approx. 60g) Vanilla Whey or Casein protein powder
  • 1/2 cup rolled oats (gluten-free if needed)
  • 1/4 cup almond flour
  • 2 tablespoons melted coconut oil or grass-fed butter
  • 1/4 cup unsweetened applesauce
  • 1/2 teaspoon cinnamon
  • A pinch of sea salt

Instructions

  1. Preheat your oven to 350°F (175°C). In a large mixing bowl, toss the sliced apples with lemon juice, cinnamon, vanilla extract, and maple syrup. Ensure every apple slice is evenly coated with the spices. Transfer the apple mixture into a 9×9 inch baking dish or four individual ramekins. Spread them out evenly to ensure consistent cooking.
  2. In a separate bowl, combine the vanilla protein powder, rolled oats, almond flour, cinnamon, and salt. Stir in the melted coconut oil (or butter) and the unsweetened applesauce. Use a fork to mix until the texture becomes crumbly and slightly clumpy. If the mixture is too dry, add a teaspoon of water or more applesauce until it reaches a “rubble” consistency.
  3. Sprinkle the protein crumble mixture evenly over the top of the apples. Place the dish in the center rack of the oven and bake for 25 to 30 minutes. You will know it is done when the apples are tender and bubbling, and the protein topping has turned a light golden brown. Let it cool for 5 minutes before serving to allow the juices to thicken. Top with a dollop of Greek yogurt for even more protein.
