Apple Cinnamon Overnight Oats

Apple Cinnamon Overnight Oats

  • Total Time: 10 minutes
  • Diet: Gluten-Free, Vegetarian

Ingredients

Scale
  • 1/2 cup rolled oats (old-fashioned oats)
  • 1/2 cup milk of choice (almond, oat, or dairy)
  • 1/4 cup Greek yogurt (plain or vanilla)
  • 1 teaspoon chia seeds
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon maple syrup or honey
  • 1/4 teaspoon vanilla extract
  • 1/2 medium apple, diced into small pieces
  • A pinch of salt

Instructions

  1. In a mason jar or a small sealable container, add the rolled oats, chia seeds, ground cinnamon, and a pinch of salt. Pour in your milk of choice, Greek yogurt, maple syrup, and vanilla extract. Use a spoon to stir everything together until the mixture is well-combined and there are no dry clumps of oats or cinnamon.
  2. Wash and dice your apple into small, bite-sized cubes. You can leave the skin on for extra fiber and texture. Add the diced apples to the oat mixture and gently fold them in. Ensure the apples are submerged or coated so they stay fresh and absorb the flavors of the cinnamon and syrup while they soak.
  3. Seal the jar tightly with a lid and place it in the refrigerator. Let the oats soak for at least 4 hours, though overnight (about 8 hours) is best for the creamiest texture. When you are ready to eat, give the oats a quick stir. If the mixture is too thick, splash in a little extra milk. Garnish with a few extra apple slices or a sprinkle of cinnamon and enjoy cold.
