Air Fryer Zucchini Fries with Parmesan and Garlic Powder

Air Fryer Zucchini Fries with Parmesan and Garlic Powder

  • Total Time: 25 minutes
  • Diet: Vegetarian, Low-Carb

Ingredients

Scale
  • 2 medium zucchini, ends trimmed
  • 1/2 cup Panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • Cooking spray (olive oil or avocado oil)

Instructions

  1. Start by washing your zucchini and patting them completely dry. Slice each zucchini in half crosswise, then cut each half into sticks about 1/2 inch thick (like standard fries). In a shallow bowl, whisk the two eggs. In a separate shallow bowl or plate, combine the Panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, oregano, salt, and pepper. Mix the dry ingredients well to ensure the seasoning is evenly distributed.
  2. Working in small batches, dip each zucchini stick into the beaten eggs, ensuring it is fully coated. Lift the stick and let any excess egg drip off. Immediately roll the zucchini in the Parmesan and breadcrumb mixture, pressing lightly so the coating sticks to all sides. Place the coated fries on a clean plate or parchment paper until you are ready to cook. Pre-heat your air fryer to 400°F (200°C) for about 3 minutes.
  3. Lightly grease the air fryer basket with cooking spray. Arrange the zucchini fries in a single layer in the basket, making sure they do not touch; you may need to cook in batches. Lightly spray the tops of the fries with cooking spray to help them brown. Cook at 400°F for 8 to 10 minutes, flipping them halfway through, until they are golden brown and crispy. Once cooked, remove them carefully with tongs.
  4. Transfer the hot zucchini fries to a serving platter. Serve them immediately while they are at their peak crispiness. These fries pair beautifully with a side of marinara sauce, ranch dressing, or a spicy chipotle mayo. For an extra touch of flavor, sprinkle a little fresh parsley or additional grated Parmesan over the top before serving.
