Ingredients
Scale
- 2 large sweet potatoes (peeled and cut into 1/2-inch cubes)
- 1.5 tablespoons extra virgin olive oil
- 1 teaspoon ground cinnamon
- 1/4 teaspoon sea salt
- Optional: 1 teaspoon maple syrup for extra glaze
- Optional: A pinch of cayenne pepper for a sweet-heat kick
Instructions
- Start by washing and peeling your sweet potatoes. Use a sharp knife to cut them into uniform 1/2-inch cubes; keeping the size consistent ensures they all cook at the same rate. In a large mixing bowl, combine the sweet potato cubes, olive oil, cinnamon, and salt. Toss everything thoroughly until every single cube is evenly coated in the oil and spices. If you want a stickier finish, drizzle in the optional maple syrup during this stage.
- Preheat your air fryer to 400°F (200°C) for about 3 minutes. Place the seasoned sweet potato cubes into the air fryer basket in a single layer. Do not overcrowd the basket, as air needs to circulate to get them crispy. Cook for 12 to 15 minutes. Halfway through the cooking time, remove the basket and give it a good shake to flip the cubes. Continue cooking until the edges are slightly browned and the centers are fork-tender.
- Once the cubes are crisp and fragrant, remove them from the air fryer immediately. Transfer the hot sweet potatoes to a serving bowl. For an extra touch of elegance, sprinkle a tiny bit of fresh cinnamon or flaky sea salt over the top while they are still glistening. Serve them hot as a side dish, or let them cool slightly to toss into a kale salad or a grain bowl.
- Cook Time: 25 minutes
