- 1 ½ cups all-purpose flour
- 2 tablespoons sugar (or maple syrup)
- 1 tablespoon baking powder
- 1 ½ teaspoons pumpkin pie spice
- ½ teaspoon salt
- ½ cup pumpkin puree (not pumpkin pie filling)
- 1 large egg
- ¾ cup milk (dairy or plant-based)
- 2 tablespoons melted butter or coconut oil
- 1 teaspoon vanilla extract
- Optional: Maple syrup or cinnamon sugar for dipping
Instructions
- Start by preheating your air fryer to 320°F (160°C). In a large mixing bowl, whisk together the flour, sugar, baking powder, pumpkin pie spice, and salt. In a separate medium bowl, combine the pumpkin puree, egg, milk, melted butter, and vanilla extract until smooth. Gently fold the wet ingredients into the dry ingredients. Stir until just combined; do not overmix, as small lumps are perfectly fine and help keep the bites fluffy. Lightly grease a silicone egg bite mold or mini muffin mold that fits inside your air fryer basket.
- Spoon the batter into the prepared silicone molds, filling each cavity about two-thirds of the way full. Do not overfill them, as the batter will rise during the cooking process. Place the mold into the air fryer basket. Cook at 320°F for 7 to 9 minutes. The bites are done when they have risen and a toothpick inserted into the center comes out clean. If you have a smaller air fryer, you may need to work in batches.
- Carefully remove the mold from the air fryer and let the bites cool for 2 minutes. Pop the pancake bites out of the silicone molds onto a serving plate. Serve them warm with a side of maple syrup for dipping, or toss them in a small bowl of cinnamon sugar while they are still slightly moist for a donut-hole effect. Add a side of fresh fruit or Greek yogurt to complete the meal.
