Ingredients
Scale
- 1 lb fresh carrots (whole carrots peeled or baby carrots)
- 2 tablespoons honey
- 1 tablespoon olive oil or melted butter
- 1 teaspoon fresh thyme leaves (plus more for garnish)
- 1/2 teaspoon kosher salt
- 1/4 teaspoon cracked black pepper
- Optional: A squeeze of fresh lemon juice for brightness
Instructions
- Start by washing and peeling your carrots. If you are using whole carrots, slice them diagonally into 1/2-inch thick coins or keep them as long batons for a more rustic look. Ensure all pieces are relatively the same size so they cook at the same rate. In a large mixing bowl, whisk together the honey, olive oil, fresh thyme leaves, salt, and pepper until the glaze is well combined.
- Preheat your air fryer to 380°F (190°C) for about 3 minutes. Toss the prepared carrots into the bowl with the honey mixture and coat them thoroughly. Arrange the carrots in the air fryer basket in a single layer. Cook for 12 to 15 minutes. Halfway through the cooking time, pull out the basket and give it a good shake to ensure even browning. The carrots are done when they are fork-tender and show golden-brown caramelized edges.
- Transfer the roasted carrots to a serving platter while they are still hot. Drizzle any remaining glaze from the air fryer basket over the top. Garnish with a few extra sprigs of fresh thyme and a light sprinkle of sea salt if desired. If you prefer a bit of acidity, add a tiny squeeze of lemon juice just before serving to make the flavors pop.
- Cook Time: 25 minutes
