  • 1 small sugar pumpkin (approximately 2 lbs)
  • 2 tablespoons melted coconut oil or unsalted butter
  • 3 tablespoons granulated sugar (or coconut sugar for a refined sugar-free option)
  • 1.5 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon salt
  • Optional: Maple syrup or Greek yogurt for dipping

Instructions

  1. Start by preparing your pumpkin. Use a sharp knife to slice off the top and bottom of the sugar pumpkin. Stand it upright and carefully peel away the tough outer skin using a vegetable peeler or a knife. Cut the pumpkin in half and scoop out the seeds and pulp. Slice the pumpkin flesh into even strips, about 1/2 inch thick and 3 inches long, to ensure they cook at the same rate.
  2. In a large mixing bowl, toss the pumpkin strips with the melted coconut oil or butter until every piece is lightly coated. In a small separate bowl, whisk together the sugar, cinnamon, nutmeg, and salt. Sprinkle the cinnamon-sugar mixture over the oiled pumpkin fries and toss again. Ensure each fry has a generous coating of the sweet spice mix.
  3. Preheat your air fryer to 375°F (190°C) for 3 minutes. Place the seasoned pumpkin fries in the air fryer basket in a single layer. Do not overcrowd the basket, as air needs to circulate to make them crispy. Work in batches if necessary. Cook for 12 to 15 minutes, shaking the basket halfway through the cooking time. The fries are done when they are golden brown and slightly crisp on the edges.
  4. Carefully remove the fries from the air fryer using silicone-tipped tongs. Transfer them to a serving platter while they are still hot. For an extra touch of sweetness, you can sprinkle a little more cinnamon sugar on top. Serve immediately with a side of maple syrup, caramel sauce, or a sweetened Greek yogurt dip.
