- 1 lb Lean ground beef (90/10 preferred)
- 1 Small yellow onion, finely diced
- 2 Cloves garlic, minced
- 1 Packet taco seasoning (or 2 tbsp homemade blend)
- 1/4 Cup water or beef broth
- 4 Large flour tortillas (burrito size)
- 2 Cups shredded Mexican blend cheese (or sharp cheddar)
- Olive oil spray or melted butter
- Optional: Pickled jalapeños, fresh cilantro, or diced tomatoes

- Step 1: Preparation
Start by preparing the beef filling. Place a large skillet over medium-high heat. Add the ground beef and diced onion. Cook until the beef is fully browned and the onions are translucent, breaking the meat into small crumbles with a wooden spoon. Drain any excess grease from the pan. Stir in the minced garlic and cook for 1 minute until fragrant. Add the taco seasoning and water. Simmer for 2-3 minutes until the liquid reduces and coats the meat in a thick, flavorful sauce. Remove from heat and set aside. While the meat cools slightly, preheat your air fryer to 375°F (190°C). - Step 2: Cooking
Lay the tortillas flat on a clean work surface. Sprinkle about 1/4 cup of cheese over one half of each tortilla. Top the cheese with a generous layer of the seasoned ground beef mixture, then add another 1/4 cup of cheese on top of the beef—this acts as the “glue.” Fold the tortilla in half to create a half-moon shape. Lightly spray both sides of the folded quesadilla with olive oil spray. Place one or two quesadillas in the air fryer basket, ensuring they do not overlap. If your air fryer fan is very strong, you can secure the edges with a toothpick to keep the tortilla from flapping open. Cook at 375°F for 4 minutes, then carefully flip and cook for an additional 3-4 minutes until the cheese is bubbling and the exterior is deep golden brown. - Step 3: Plating
Carefully remove the hot quesadillas from the air fryer using tongs. Place them on a cutting board and let them rest for 1-2 minutes; this allows the cheese to set so it doesn’t slide out when you cut it. Use a pizza cutter or a sharp knife to slice each half-moon into three triangles. Arrange the triangles on a serving platter. Serve immediately while hot and crispy with sides of sour cream, chunky salsa, and fresh guacamole for dipping.
