- 1 teaspoon dried sage or thyme
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Instructions
- Step 1: Preparation – Start by preparing your vegetables and protein. Peel the butternut squash using a sharp vegetable peeler, then cut it in half and scoop out the seeds. Dice the squash into uniform 1-inch cubes to ensure even cooking. Slice your chosen sausage into rounds. In a large mixing bowl, toss the squash, sausage, and red onion wedges with olive oil, sage, garlic powder, salt, and pepper. Make sure every piece is lightly coated in oil and spices.
- Step 2: Cooking – Preheat your air fryer to 390°F (200°C) for about 3 minutes. Place the mixture into the air fryer basket in a single layer if possible; work in batches if your air fryer is small. Set the timer for 18 to 20 minutes. About halfway through the cooking time, remove the basket and give it a good shake. This ensures the squash browns on all sides and the sausage gets those crispy, charred edges.
- Step 3: Plating – Check the squash for tenderness using a fork. Once the squash is soft inside and golden outside, remove the mixture from the air fryer. Transfer the dinner to a large serving platter or individual bowls. Garnish with fresh parsley for a pop of color, or drizzle a tiny bit of maple syrup over the top if you want to lean into the sweet and savory contrast. Serve immediately while hot.
