Air Fryer Buffalo Cauliflower Bites with Ranch Dip

Air Fryer Buffalo Cauliflower Bites with Ranch Dip

  • Total Time: 30 minutes
  • Diet: Vegetarian

Ingredients

Scale
  • 1 medium head of cauliflower, cut into bite-sized florets
  • 1/2 cup all-purpose flour (or almond flour for low-carb)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup milk (or water)
  • 1/2 cup buffalo sauce
  • 1 tablespoon melted butter or olive oil
  • 1/2 cup Greek yogurt or sour cream
  • 2 tablespoons mayonnaise
  • 1 teaspoon dried dill
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon fresh chives, chopped
  • A squeeze of lemon juice
  • Salt and pepper to taste

Instructions

  1. Start by washing the cauliflower and cutting it into uniform, bite-sized florets. In a large mixing bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, salt, pepper, and milk. The batter should be thick enough to coat the cauliflower without dripping off completely. Toss the florets into the bowl and stir until every piece is evenly coated.
  2. Preheat your air fryer to 375°F (190°C). Lightly grease the air fryer basket with cooking spray. Place the battered cauliflower florets in the basket in a single layer, ensuring they are not overlapping too much. Cook for 10 to 12 minutes, shaking the basket halfway through, until the edges start to turn golden brown and the batter sets.
  3. While the cauliflower cooks, whisk together the buffalo sauce and melted butter in a small bowl. Once the first cooking cycle is done, remove the cauliflower and place it back into a clean bowl. Pour the buffalo mixture over the bites and toss gently. Return the sauced cauliflower to the air fryer for an additional 3 to 5 minutes at 400°F (200°C) to caramelize the sauce and get that extra crunch.
  4. In a small bowl, combine the Greek yogurt, mayonnaise, dill, garlic powder, onion powder, chives, and lemon juice. Stir until smooth. Taste and adjust the seasoning with salt and pepper. If the dip is too thick, add a teaspoon of milk to reach your desired consistency.
  5. Transfer the hot buffalo cauliflower bites to a serving platter. Serve immediately while they are at peak crispiness. Place the bowl of ranch dip in the center and garnish with extra chives or celery sticks for a classic buffalo wing presentation.
