- 1 thick slice of sourdough or whole-grain bread
- 1/2 ripe avocado
- 1 large egg
- 1/2 teaspoon lemon juice
- 1/4 teaspoon red pepper flakes
- Salt and black pepper to taste
- Optional: Everything Bagel seasoning or fresh chives
Instructions
- Slice the avocado in half and remove the pit. Scoop the flesh into a small bowl and add the lemon juice, salt, and pepper. Use a fork to mash the avocado until it reaches your desired consistency—some prefer it chunky, while others like it smooth. The lemon juice keeps the color vibrant and adds a necessary hit of acidity.
- Spread the mashed avocado generously over the slice of bread. Use the back of a spoon to create a small “well” or indentation in the center of the avocado mound. This well is crucial because it holds the egg in place and prevents it from sliding off the bread during the air frying process. Carefully crack the egg directly into the indentation.
- Place the assembled toast carefully into the air fryer basket. Set the air fryer to 350°F (175°C). Cook for 6 to 8 minutes. At the 6-minute mark, check the egg; for a runny yolk, 6-7 minutes is usually sufficient. If you prefer a firm yolk, leave it in for the full 8 to 9 minutes. The bread will become deeply golden and crispy during this time.
- Carefully remove the toast from the air fryer using a spatula. Sprinkle with red pepper flakes, extra salt, pepper, or Everything Bagel seasoning. Garnish with fresh herbs if desired. Serve immediately while the bread is hot and the egg is fresh.
