A vibrant and refreshing salad that combines sweet, tangy, and spicy flavors, perfect for summer barbecues or as a light lunch.


Ingredients

  • 1 large mango (ripe but firm, peeled and julienned)
  • 1 cup red cabbage (finely shredded)
  • 1 cup carrots (julienned or grated)
  • 1/2 cup red onion (thinly sliced)
  • 1/2 cup bell pepper (any color, thinly sliced)
  • 1/4 cup fresh mint leaves (roughly chopped)
  • 1/4 cup fresh cilantro (roughly chopped)
  • 1/4 cup roasted peanuts (roughly chopped, for garnish)
  • 1 tbsp sesame seeds (toasted, for garnish, optional)
  • 1/4 cup fresh lime juice
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar (or palm sugar)
  • 1 clove garlic (finely minced)
  • 1/2 small red chili (finely minced, or to taste)
  • 1 tsp fresh ginger (grated)

Instructions

  1. Preparation: Start by prepping all your salad components. Peel the ripe mango and julienne it into thin strips. Finely shred the red cabbage and julienne or grate the carrots. Thinly slice the red onion and bell pepper. Chop the fresh mint and cilantro, set all these ingredients aside in a large mixing bowl.
  2. Mixing: In a separate bowl, prepare the zesty dressing. Combine the fresh lime juice, fish sauce, brown sugar, minced garlic, red chili, and grated ginger. Whisk the mixture until the sugar has dissolved completely.
  3. Assembling: Pour the dressing over the prepared salad ingredients in the large mixing bowl. Toss everything gently to ensure the dressing evenly coats all the veggies and mango.
  4. Garnishing: For the finishing touch, sprinkle the salad with roughly chopped roasted peanuts and sesame seeds for an added crunch.

Notes

Serve chilled or at room temperature. Great as a side dish or light lunch. Can add grilled chicken or shrimp for a hearty meal.
