Delightful Vegetarian Quesadillas filled with black beans, corn, and cheese, perfect for any meal or snack.
Ingredients

- 4 large flour tortillas
- 1 cup shredded cheese (cheddar, mozzarella, or a blend)
- 1 cup black beans, rinsed and drained
- 1 cup corn (canned or frozen)
- 1 bell pepper, diced
- 1 small onion, diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Olive oil for cooking
- Sour cream or salsa for serving (optional)
Instructions
- In a skillet, heat a little olive oil over medium heat. Add diced onion and bell pepper and sauté until they are soft, around 5 minutes.
- Stir in the rinsed black beans, corn, cumin, chili powder, salt, and pepper. Cook for another few minutes until everything is warmed through and fragrant.
- On one half of each tortilla, sprinkle a layer of cheese, followed by the vegetable mixture. Add another layer of cheese on top before folding the tortillas in half.
- Place the folded tortillas in the skillet and cook until they are golden brown and the cheese is melted, about 3-4 minutes per side. Remove from heat and slice into wedges.
Notes
Store leftover quesadillas in an airtight container for up to 3 days. Can be reheated in a skillet or microwave.
