Description

Delightful Vegetarian Quesadillas filled with black beans, corn, and cheese, perfect for any meal or snack.


Ingredients

  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1 cup black beans, rinsed and drained
  • 1 cup corn (canned or frozen)
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Olive oil for cooking
  • Sour cream or salsa for serving (optional)

Instructions

  1. In a skillet, heat a little olive oil over medium heat. Add diced onion and bell pepper and sauté until they are soft, around 5 minutes.
  2. Stir in the rinsed black beans, corn, cumin, chili powder, salt, and pepper. Cook for another few minutes until everything is warmed through and fragrant.
  3. On one half of each tortilla, sprinkle a layer of cheese, followed by the vegetable mixture. Add another layer of cheese on top before folding the tortillas in half.
  4. Place the folded tortillas in the skillet and cook until they are golden brown and the cheese is melted, about 3-4 minutes per side. Remove from heat and slice into wedges.

Notes

Store leftover quesadillas in an airtight container for up to 3 days. Can be reheated in a skillet or microwave.
