- 3 ripe bananas
- 1/4 cup coconut oil, melted
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan.
- In a large mixing bowl, mash the ripe bananas until smooth. Add melted coconut oil, brown sugar, and vanilla extract; mix well.
- In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Pour the batter into the prepared loaf pan. Bake for 50-60 minutes, or until a toothpick comes out clean.
- Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Ensure bananas are very ripe for the best flavor. Don’t overmix the batter for a softer loaf.
