A delightful vegan treat combining the natural sweetness of bananas with the rich texture of coconut oil.


Ingredients

  • 3 ripe bananas
  • 1/4 cup coconut oil, melted
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a large mixing bowl, mash the ripe bananas until smooth. Add melted coconut oil, brown sugar, and vanilla extract; mix well.
  3. In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Pour the batter into the prepared loaf pan. Bake for 50-60 minutes, or until a toothpick comes out clean.
  6. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Ensure bananas are very ripe for the best flavor. Don’t overmix the batter for a softer loaf.
