- 2 1/2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 tablespoon vanilla extract
- 1 cup milk
- Food coloring (pink, blue, yellow, purple)
- Buttercream frosting
- Gold or silver edible glitter
- Unicorn horn (made from fondant or a cone)
Instructions
- Preheat the oven to 350°F (175°C) and grease and flour three 8-inch round cake pans.
- In a bowl, whisk together the flour, baking powder, and salt; set aside. In another bowl, cream the butter and sugar until fluffy, about 4-5 minutes.
- Add eggs one at a time, mixing well after each. Stir in vanilla. Alternate adding the flour mixture and milk, starting and ending with the flour mixture. Divide and color the batter, then pour into the pans in a swirling pattern.
- Bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely.
- Stack the layers with buttercream frosting, frost the entire cake, and decorate with edible glitter and a unicorn horn on top.
Notes
Store leftover cake in an airtight container in the refrigerator for up to 3 days. Best to slice just before serving.
