Description

Ube Flan Cake is a delightful Filipino dessert made with rich ube and topped with a silky flan, perfect for any occasion.


Ingredients

  • 1 cup ube (purple yam), mashed
  • 1 cup sugar
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 5 large eggs
  • 1 tablespoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan over medium heat, melt the sugar until it forms a golden caramel. Pour the caramel into a round baking pan to harden.
  3. In a mixing bowl, combine the mashed ube, sweetened condensed milk, evaporated milk, eggs, and vanilla. Mix until smooth.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the ube mixture and combine well.
  5. Pour the ube mixture over the hardened caramel in the baking pan.
  6. Place the baking pan in a larger pan filled with water and bake for 50-60 minutes or until set.
  7. Let it cool at room temperature, then refrigerate for at least 4 hours before unmolding.
  8. Serve chilled and enjoy!

Notes

Store any leftover cake in the refrigerator for up to 4 days, or freeze for up to a month. Use fresh ube for the best flavor.
