Ube Flan Cake is a delightful Filipino dessert made with rich ube and topped with a silky flan, perfect for any occasion.

- 1 cup ube (purple yam), mashed
- 1 cup sugar
- 1 can (14 oz) sweetened condensed milk
- 1 can (12 oz) evaporated milk
- 5 large eggs
- 1 tablespoon vanilla extract
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a saucepan over medium heat, melt the sugar until it forms a golden caramel. Pour the caramel into a round baking pan to harden.
- In a mixing bowl, combine the mashed ube, sweetened condensed milk, evaporated milk, eggs, and vanilla. Mix until smooth.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the ube mixture and combine well.
- Pour the ube mixture over the hardened caramel in the baking pan.
- Place the baking pan in a larger pan filled with water and bake for 50-60 minutes or until set.
- Let it cool at room temperature, then refrigerate for at least 4 hours before unmolding.
- Serve chilled and enjoy!

Store any leftover cake in the refrigerator for up to 4 days, or freeze for up to a month. Use fresh ube for the best flavor.
