- 1 lb ground turkey
- 1 large sweet potato, diced
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 cups chicken broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a large pot, heat a tablespoon of olive oil over medium heat.
- Add the chopped onion and diced bell pepper to the pot. Sauté until the onion becomes translucent and the bell pepper softens, about 5 minutes.
- Stir in the minced garlic and ground turkey. Cook until the turkey is browned, breaking it apart with a spoon, about 7-10 minutes.
- Add the diced sweet potato, black beans, diced tomatoes, chicken broth, chili powder, cumin, salt, and pepper to the pot. Stir well to combine.
- Bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for 30-40 minutes until the sweet potatoes are tender.
- Serve hot in bowls and enjoy.

This chili stores well in the refrigerator for up to 4 days. Freeze for up to 3 months for longer storage.
