Description

Ingredients

  • 1 lb ground turkey
  • 1 large sweet potato, diced
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat a tablespoon of olive oil over medium heat.
  2. Add the chopped onion and diced bell pepper to the pot. Sauté until the onion becomes translucent and the bell pepper softens, about 5 minutes.
  3. Stir in the minced garlic and ground turkey. Cook until the turkey is browned, breaking it apart with a spoon, about 7-10 minutes.
  4. Add the diced sweet potato, black beans, diced tomatoes, chicken broth, chili powder, cumin, salt, and pepper to the pot. Stir well to combine.
  5. Bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for 30-40 minutes until the sweet potatoes are tender.
  6. Serve hot in bowls and enjoy.

Notes

This chili stores well in the refrigerator for up to 4 days. Freeze for up to 3 months for longer storage.
