Ingredients

  • 1 cup hummus
  • 8 oz lean turkey, sliced
  • 1 cup baby spinach
  • 1 cup shredded carrots
  • 1 cucumber, sliced into matchsticks
  • 1 red bell pepper, sliced into strips
  • Olive oil (optional, for warming tortillas)
  • Lemon juice (optional, for seasoning hummus)
  • Salt and black pepper to taste
  • Feta cheese (optional)
  • Fresh herbs (optional, like parsley or cilantro)

Instructions

  1. Prepare vegetables by rinsing spinach, shredding carrots, slicing cucumber and bell pepper.
  2. Warm tortillas in a skillet or microwave for easier rolling.
  3. Mix hummus with lemon juice, salt, and black pepper in a bowl.
  4. Spread seasoned hummus on a tortilla, add turkey, spinach, carrots, cucumber, bell pepper, and optional feta and herbs.
  5. Roll the tortilla tightly, placing seam side down.
  6. Slice into pinwheels or halves for serving.
  7. Arrange on a platter and enjoy immediately or store in the fridge.

Notes

Wrap tightly in plastic to store; they stay fresh for up to two days. Best eaten within 24 hours.
