- Lemon juice (optional, for seasoning hummus)

Instructions
- Prepare vegetables by rinsing spinach, shredding carrots, slicing cucumber and bell pepper.
- Warm tortillas in a skillet or microwave for easier rolling.
- Mix hummus with lemon juice, salt, and black pepper in a bowl.
- Spread seasoned hummus on a tortilla, add turkey, spinach, carrots, cucumber, bell pepper, and optional feta and herbs.
- Roll the tortilla tightly, placing seam side down.
- Slice into pinwheels or halves for serving.
- Arrange on a platter and enjoy immediately or store in the fridge.
