- 2 large tomatoes, sliced
- 200g mozzarella cheese, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions
- Preheat the oven to 200°C (400°F).
- Roll out the puff pastry on a baking sheet and prick it all over with a fork.
- Layer the sliced tomatoes and mozzarella cheese on top.
- Drizzle with olive oil and season with salt and pepper. Bake for 25-30 minutes.
- Let cool slightly and garnish with fresh basil leaves. Drizzle with balsamic glaze if desired.
- Slice and serve warm.
